As long as you have a DTI dataset, acquired by a MRI scanner, you can
use DtiStudio, no matter which part of the body is imaged. However,
practically, tongue imaging is not as easy as the brain because it is
difficult to keep it still. During a long DTI scan, it has to be stay
still.
